Well, it's my last day at work. It's a little bittersweet. While I'm very happy and excited to be making this transition into a new part of my life, I am a little sad to be leaving the people who have meant so much to me for my entire adult life until now. I have been with this company since I was 19 years old. I love them like a second family.
I have about three hours left. The crew took me out for lunch at Olive Garden (my favorite restaurant). They gave me a cake from Cretia's (mmmm good)! And they gave me a beautiful cross necklace from James Avery. They have been so good to me and to Joseph. I will miss these people dearly.
On a lighter note, I'm looking forward to a few days off. I'm going to visit some family and I'm very excited! And then next Wednesday I step into a whole new world.

New recipe that Joseph LOVES!
I have found a new recipe that Joseph loves. It's in a book called Taste of Home Casseroles Slow Cooker & Soups that was given to us by Kathleen for a wedding gift.
Here it is. It is a must try!
Meat Lover's Pizza Bake
1 pound ground beef
1/2 cup chopped green pepper (of course, I didn't use this)
1 can (15 ounces) pizza sauce
1 package (3-1/2 ounces) sliced pepperoni, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained (of course, I didn't use this either)
2 cups (8 ounces) shredded part-skim mozzarella cheese
3/4 cup biscuit/baking mix
2 eggs
3/4 cup milk
Directions:
In a large skillet, cook beef and green pepper over medium heat until meat is no longer pink; drain. Stir in the pizza sauce, pepperoni and olives. Transfer to a greased 11-in x 7-in x 2-in banking dish. Sprinkle with cheese.
In a small bowl, combine the biscuit mix, eggs and milk until blended. Pour evenly over cheese. Bake, uncovered, at 400 for 25-30 minutes or until golden brown. Let stand for 10 minutes before serving. Yield 6 servings.

New Job Cont.

As far as I know I will be a family law paralegal for a couple of junior associates that have been without a paralegal for over a year. I think they might start me out with Kelly McClure, the partner, just to immerse me in the way they run their law office. I am very excited and a little nervous. I just have to get things tied up with Scott's office and then I'll take a break for a few days and visit some family and then on to a new adventure starting September 9, 2009!

Things to look forward to
I'm looking forward to a wonderful weekend with the hubby and family. Can't wait to see Meredith and Jesse and to shower them with gifts for their baby Luke!
In October the girls are going to Shreveport for our annual weekend trip to the Haunted Corn Field Maize!!!! Just booked the hotel and I'm soooo excited!!!! (if you can't tell :))
